Caring for Ice Cream

As ice cream is the only food that is eaten frozen, it needs to be carefully looked after. Ice Cream is highly sensitive to heat and should never be allowed to thaw and then be re-frozen, otherwise heat shock could result.

Heat shock occurs when ice cream has been exposed to various temperatures. You'll know if your ice cream has heat shock as ice crystals will have formed around the edges and on top. Ice cream suffering from heat shock may not taste as creamy, but is safe to eat.

When shopping for ice cream to take home, make sure it is the last thing in the supermarket you buy and then go straight home so your ice cream can go straight in the freezer.

Did you know?

Ice Cream Sundaes were created in Illinois, USA, when it became illegal to sell ice cream on a Sunday. The problem was overcome when some clever traders put nuts and chocolate syrup over the ice cream. With these toppings it couldn't be called ice cream and so the Ice Cream Sundae was born.

How did Ice Cream begin in Australia?

Frederick Peters introduced ice cream to Australia in NSW in 1907. As it was impossible to transport the product all around the country without it melting, Frederick Peters set up in Perth under the name Western Ice Cream and made the first ice cream in WA in 1928.

Vanilla remains the most popular ice cream flavour around the world, closely followed by Chocolate. In the USA, the world's largest market with per capita consumption of almost six and a half times the world average, nearly 30% of volume sales are Vanilla.

What is meant by lactose intolerance?

Lactose intolerance (lactose maldigestion) is referred to as the inability to digest lactose. The solution is to consume lactose reduced or lactose free products (like Fruccio), or take dietary supplements containing the enzyme lactase that assists in lactose digestion. Main symptoms of lactose maldigestion are bloating, diarrhoea and cramps after the consumption of milk, ice cream or other dairy products.

What is meant by milk protein allergy?

A milk allergy is an over reaction by the immune system to milk protein. This type of reaction results in the formation of antibodies which trigger symptoms such as itching, swelling, gastrointestinal or respiratory problems. In extreme cases, an untreated severe allergic reaction can be fatal. It is believed that only 2% of infants are truly allergic to cows milk and in adults, this allergy is rare.
